Banana Bread - recipe review

I made Donna's Banana Bread recipe from our recipe files, yesterday. I

added some pecans in it and made a double batch. It made to reg size loafs

and a 12 muffins. It is delicious and gets done in the middle, which is

something that many recipes have a problem with.

 

Thanks Donna for this wonderful recipes. I will make it again. I took one

loaf, sliced up to the vegetarian potluck at our church yesterday and

everyone loved it. We had the muffins for breakfast yesterday and enjoying

the other loaf today.

You've made me hungry now Judy!

That is a very good recipe. I like how soft and light weight the bread

is for banana bread. Some of the recxipes I've tried come out like

glue in the center, burned on the edges and as heavy as a bowling ball.

It sure is soft and light!! I know what you mean about the glue centers that

recipes have.

Judy you can make and freeze. When I have a lot of ripe bananas I will make

several loaves and then I have then to give out the following week.

Donna, when I have a lot of ripe bananas, I peel them and freeze them, ready

for banana bread, smoothie, or anything else. Commodities a month ago gave

me two huge banana boxes filled with bananas that were getting soft. I

still have a bunch in the freezer.

I do that also and when I'm in hyper mode I bake up the loaves and this way I

can grab them on my way out the door to deliver.

So true, but I usually get a warning when baked goods are needed, thank

goodness!!

How funny...I was searching for my tried and true recipe today (which

has gone missing) and saw all the raves about this one...I think I

will give it a try. Don't want to waste any bananas!
