[vegetarian_ group] Judy Popovers lingonberry

Take a pancake and spread lingonberry jam on it and dust with powdered sugar. Do

the same with a waffle. Delicious.

I just roll them up and eat them.

I'll have to try this. I found some ligonberry jam at Big Lots recently and have

really enjoyed in on toast in the morning. I've been meaning to mention it,

since you were the first and only one I've ever heard talk about this delicious

jam.

Judy, my Mom used to make them, they puff up and pop over the tins. They have

holes in them when you open them up. I always put butter and lingonberry jam on

mine.

When they sound hollow does that mean you can fill them with a flavored pudding

like chocolate, vanilla or tapioca?

Lingonberry is not only good on toast, pancakes and oatmeal you will be

pleasantly surprised to include it in potato, stuffing and other starchy side

dishes. At Ikea you can find Lingonberry syrup which makes a lovely soda water

addition, spikes up punch, ice cream and even gives a kick to your sauces and

gravies. Some culinary specialists compare it to the cranberry in it's

diversity. Hope this helps!

It's sweet enough to use as a dessert topping and tart enough to enjoy along

with side dishes and casseroles.  I love it on top of stuffing, alongside mashed

potatoes.  Oh! In the center of oatmeal or on my bread pudding..
