Guest guest Posted October 14, 2008 Report Share Posted October 14, 2008 Pepper Pitas And Hummus 14 ounces chickpeas, canned, drained, rinsed 3 cloves garlic, minced 4 tablespoons peanut butter 1 lemon, juice of 6 tablespoons yogurt pepper pitas 8 pita bread 4 tablespoons olive oil 1 pinch salt 2 tablespoons pepper 2 tablespoons parsley Combine all of the ingredients in a food processor and blend until smooth. If too thick add a little water, lemon juice or yogurt. Preheat oven to 400 degrees. Cut pitas into quarters. Brush with the oil and sprinkle with salt, pepper and parsley.
