I'm trying to think of one I haven't used. Many of my sweet bread recipes can be found in the bread recipe folder and then click on the quick sweet breads. I use dried fruits in cookies, scones and biscotti. I add raisins to Persian rice and lentils, dried arpicots are good in lentil stews. Guest guest Posted October 15, 2008 Report Share Posted October 15, 2008 I am a " juicer " and usually put one apple in the juicer with my veggies. And I found myself with a lot of apples. So, I remembered what my mother did with apples and I went " googling " and found this recipe. It was sooooo yummie. 4-6 apples or pears. 1/3 cup flour (I used white whole wheat) 1/2 c. brown sugar 1/4 c. butter 1 c. rolled oats 1/4 tsp. nutmeg 1 tsp. cinnamon (I used more because I like cinnamon) And although the recipe didn't call for it, I added raisins. Place fruit in a buttered shallow baking dish. In small bowl, mix the rest of the ingredients well until crubly. Spread over fruit. Strawberries are another really good cooked fruit. Not to mention peaches. Yummy!! Now I'm wanting some really good fruit. Peach cobbler sounds wonderful right now. We will have less of it next year since several of the trees needed to be seriously punned. This is what we made cooked: Nectarine-peach butter with Meyers lemon juice (I posted the recipe here a while back) Peach cobbler Nectarine fruit spread Multi citrus marmalade (oranges, meyers lemons, grapefruits, minneolas and Eureka lemons) Loquat preserves (like a chunky jam) Grilled fresh figs stuffed with goat cheese, honey and pepper (will do that one again!) Grilled pineapple. That was so good (even though we had to buy the pineapple....LOL) I am also making some fruit wine, but I suppose this is not exactly cooked, it is fermented. WE also dried lots of nectarines and figs, not sure if it is considered cooking though. [sesame oil, toasted sesame oil, almond oil, or cold-pressed olive oil are excellent for this recipe] Slice into 1/4 " crescents: 1] Prune 2] Bosc Pear 3] Fuji apple 4] Cherries Throw the fruit into jar w/oil & toss. Broil/roast/bake for 10 minutes. While the fruit cooks, toast dry slivered almonds in your favorite fryihg pan. Don't add oil. The nuts already have oil. Toast at low heat. 20 minutes or so. If you like, toast sesame seeds in a different pan. No oil. Slow & low. Toss warm fruit & nuts together in a bowl w/salt. Marinate. While the fruit cools to room temp, whip cold cream, cold fake cream, cold soy products, or rice cream. Whichever you like. Serve the fruit warm, and topping cold. At first, I did a slow double-take...I don't usually think of fruit as cooked; I don't make baked stuff (desserts) very much, either. However, after I thought of it, I thought of my favorite pies: I love peach pie (or cobbler) or fresh apricots...actually, apricots in ANYTHING are good, IMHO. Then, I remembered a pie I had some time ago--oh, probably several YEARS ago, and I bought it, didn't make it. It was made of a mix of some berries, I think, and had CRANBERRIES in it. It was REALLY good.. So, I think if it were just a question off the top of my head, I think my favorite COOKED fruit must be CRANBERRIES. I don't use them much, because, around here, they are certainly only seasonally available.
