Ok here is the Pear sauce recipe: HOMESTYLE PEAR SAUCE 9 pounds pears, peeled, cored and sliced 1 cup water 3/4 cup sugar 2 tablespoons lemon juice 1-2 teaspoons ground cinnamon (optional) Combine pears, water, and lemon juice in heavy-bottomed 8 quart pan. Bring to a boil, stirring often. Reduce heat,cover and simmer until soft, stirring often (about 30 minutes). Add sugar and cinnamom (if desired), and bring to a boil. If chunkier than desired, put through a food mill. Fill clean,sterilized jars with hot sauce, leaving 1/2 inch headspace. Gently run non-metallic spatula between sauce in jars and jars to remove any air bubbles. Wipe rims clean; top with hot sterilized lids; then firmly screw on bands (without over tightening). Process in boiling water bath for 15 minutes for pints, 20 minutes for quarts. Amount of sugar can be changed, depending on taste. I do the first part,(before adding sugar) to save time in the crock pot, then while that is going, I am free to do other pears in other ways. After sugar is added, and mixture has been put through food mill, I often put it in the oven on 250 degrees, stirring every hour, until it is of the thickness I desire, then proceed with canning as directed. I am such a busy mom of a large brood, anything to save time helps. I just found a recipe for pear preserves with ginger I also am going to try.
