Guest guest Posted October 17, 2008 Report Share Posted October 17, 2008 Roasted Garlic Beet Timbales 2 tbsps. olive oil 6 medium to large beets, peeled, quartered salt ground black pepper 1 1/2 large heads garlic, peeled, 1 tbsp. balsamic vinegar 2 tbsps. raspberry vinegar 2 tbsps. dry red wine or grape juice 1 tbsp. sugar 1 tbsp. softened butter Preheat oven to 400 degrees. In a 9-inch glass baking dish, toss olive oil and beets. Sprinkle with salt and pepper to taste. Place in oven for 45 minutes. Toss in garlic cloves and bake another 45 minutes, tossing occasionally, until beets are tender. Place in blender and add remaining ingredients. Puree until smooth.
