Minced Spinach Cream Cheese Spread

 

8 ounce package cream cheese softened

8 ounce package farmer cheese softened Note*

1/2 pint yogurt

2 cloves garlic

3 tablespoons fresh parsley chopped

3 spring onions with tops chopped

1 cup fresh spinach minced

 

Combine all ingredients in blender and blend until smooth.

Serve with crackers or spread on bread.

 

*Note - I take cottage cheese place in cheesecloth and squeeze it.  It makes a

great farmers cheese for this recipe.  I make it during the holidays each year.

Forgive my ignorance. I'm not as familiar with all the names and

nicnames of all the veggies mentioned in the recipes I see within the

group as I should be, I guess. What is a " spring onion? " Is this the

same as a " green onion/scallion? "
