Question of the Week - What kind of pasta do you like and how do you use it?

Time for another Question of the Week-

 

What kind of pasta noodles do you like and what kind of dishes do you use

them in?

 

Examples - Do you make you own pasta, ravioli, gnocchi, dumplings, etc.?

Do you prefer noodles made of multigrain, whole wheat, semolina, rice,

buckwheat or quinoa. etc..... Do you have a brand that you think tastes

better than another?

 

What kind of dishes do you use them in? ex . soups, salads, toasted with

rice and then boiled, spaghetti, lasagna, etc........

 

Please share your recipes.

I like the little stars and alphabet shapes. I don't really have a

recipe for my tortilla soup but I add those to it.

 

I will try to write my recipe down and post it.

I've never tried to make pasta, I would like to learn though.

My favorite shape is rigatoni the large one. I like it with any type

of spaghetti sauce and a lot of parmesan cheese on top.

Thanks Judy.

I'm going to ask for a pasta maker this Christmas. I think I would use

it and not stash on a shelf.

My favorite pasta is angel hair. I like it hot with melted butter,

garlic powder and some Parmesan or Romano cheese on top.

My favorite is angel hair. I but in the refrigerated section of the store. I

like it with a barely cooked topping of fresh tomatoes, a pear, onion, and

garlic. On top I put vege Parmesan and fresh basil.

Rigitoni (the large ones), it reminds me of my grandmom and her spagetti sauce -

Hmm I think for me it is Penne served with a red lentil and mushroom spicy

sauce, mind you I don't think there is a pasta I don't like! I love noodles of

all kinds especially in a spicy Oriental soup (loads of tofu, bamboo shoots,

shiitake mushrooms, chilli and coriander in a light veg broth - YUM!!)

For the quick pasta I usually buy the Barilla Multi Grain pasta.

Easier to cook than the whole wheat pasta.

Have a pasta maker that has been in the family since I was born.

I want to start making Gluten free pasta like ravioli and lasagna are

my favorites.

Making a vegan lasagna this week first time being done in my house.

Almost seems wrong to make it without real cheese.

So if it turns out well that will be what I make for Thanksgiving.

If the gluten-free pasta turns out well, please send instructions. My

daughter-in-law has to be gluten-free and really misses pasta. She also misses

bread. All the gluten-free on that she has tasted are not good. Thank you.

Any shape pasta works for me. If I don'tr feel like cooking much I will

saute onions and garlic in olive oil and toss with cooked pasta and

sprinkle parm. and herbs over the top.

Now I might be a little partial to the spiral shaped ones, come to

think of it.

If I have to pick just one as a favorite then it is tortellini....but

I like many pastas. Have made lasagne noodles, also like cannelloni,

raviolis (all sizes), angel hair pasta, all these in Italian type dishes.

 

For asian dishes I like rice noodles for Pad Thai and asian noodle

tofu soup, and also the soba noddles (buckwheat) with miso soup.

and I love any pasta from teeny acini di pepe to 2 foot long spaghetti.

I realize that I am late answering this but here it is.  I have learned to make

my own pasta.  One of the nice things about doing this is both of my children

(boy & girl) like to help with the pasta machine, and they do ask a lot of

questions.  Hopefully they will continue to make their own as they get older.

We use whatever type of flour that is on hand.  I have used white, whole wheat,

simolena, chickpea, and buckwheat.  We make ravioli which is never the same

twice.  We use whatever is on hand for the filling, usually onion, garlic,

cheese and any veggie that is in the fridge:  brocoli, cauliflower, carrots,

beets, it is always an experiment.  We have make the noodles for lasagne, or for

soups.  We make our own marinara sauce and have linguini.  In our house we like

to experiment.  We have even used dry sundried tomatoes in the pasta for

addition al flavour.

One of the things I like to do when making the lasagne noodles is put fresh

herbs between two layers of pasta and put it back through the machine on the

thinnest setting.  It gives the pasta a flavour of its own.
