Artichokes and Goat Cheese on Polenta

 

Slice half-inch rounds of ready-made polenta (sold in deli section). Cut rounds

in half and spread with soft goat cheese. Top with small pieces of marinated

artichoke and slices of vine-ripened cherry tomatoes. Bake for 10 minutes at 350

degrees. Garnish with small basil or oregano leaves

What about adding some arugala or spinach leaves underneath the cheese?
