Hominy ( In the Can)

I saute it wilh lots of onions and garlic in olive oil.  I add chopped cilantro,

little salt and bit of red pepper flakes and eat.

I also use this with black beans and make hominy & black bean enchiladas. 

Everyone loves them.

I saute it in olive oil until it is just turning and scramble in some eggs

with it. Delicious breakfast or any time you want some eggs to eat.

And you can add some napoles (cactus) tastes almost like green beans.

I make it for parties and potlucks and people love it, eat it up and then ask me

what it was lol

If you like Hominy you will LOVE Mote it is a type of Hominy from Peru. At

current I have only found it dried at certain Brazilian markets and the brands

offered vary. You cook it like legumes with plenty of water in a crock pot and

it opens to about 2x the size of a popped popcorn - beautiful. It makes a great

start to soups, as a side dish or even as a complete meal salad style. If you

ever see this in your market do give it a try. I have recently been examining

" Native " foods from around the world and it is amazing the diversity and flavors

that are out there.
