Go to a Latin market and ypu can find cactus in a jar or fresh cleaned and chopped in the produce isle. There are some aloe plants that can cause severe intestinal distress and as a rule most chefs prefer to use it on the skin not in the belly. Food 4 Less and Food Max both regularly carry prepared and whole Nopales these are flat round cactus " leaves " specifically raised for food value. As Donna also stated many stores carry the bottled Nopales in the Ethnic food area, do drain and rinse for best flavor as they are naturally gelatinous like Okra which can be used as a successful substitute to cactus in recipes.
