Subbing margarine for the butter is fine, but don't sub half & half or milk for the cream, it will curdle. Not a diet recipe! Creamy Tomato Basil Soup 2 small cans diced tomatoes (not flavored, just tomatoes) or the same amount of fresh tomatoes 1/2 cup butter (or margarine) 1 cup heavy cream 14 leaves fresh basil, chopped Use a blender or food processor to puree the tomatoes to your preferred consistency -- leave some tomatoes out of the blender if you like chunky soup. Melt butter or margarine in a saucepan; add tomatoes. Heat; add cream and basil. Serve with a salad and some good crusty bread. Leftovers (if you have any) keep well for lunch the next day. Enjoy!
