Scandinavian Lentil Soup vegetable cooking spray 1 medium onion, chopped 1 medium carrot, diced 1 medium celery ribs, diced 2 tablespoons tomato paste 1 cup dry red wine 4 cups vegetable broth 4 cups water 1 1/2 cups lentils 1/2 cup sherry 3 tablespoons balsamic vinegar 1 teaspoon Dijon mustard 1/4 teaspoon nutmeg 1/4 cup chives, finely chopped Few dill weed sprigs for garnish Spray a large Dutch oven with cooking spray. Heat over medium heat; add onion, carrot and celery. Saute until the vegetables are tender, stirring occasionally (8 minutes). Mix in tomato paste, wine, broth, and water. Bring to a boil; add lentils. Simmer, uncovered, until the lentils are tender (about 45 minutes). Stir in sherry, vinegar, mustard, nutmeg, and salt and pepper to taste.
