This is a nice rich lentil soup.  Good for a cold evening.

 

Scandinavian Lentil Soup

 

vegetable cooking spray

1 medium onion, chopped

1 medium carrot, diced

1 medium celery ribs, diced

2 tablespoons tomato paste

1 cup dry red wine

4 cups vegetable broth

4 cups water

1 1/2 cups lentils

1/2 cup sherry

3 tablespoons balsamic vinegar

1 teaspoon Dijon mustard

1/4 teaspoon nutmeg

1/4 cup chives, finely chopped

Few dill weed sprigs for garnish

 

Spray a large Dutch oven with cooking spray. Heat over medium heat; add onion,

carrot and celery. Saute until the vegetables are tender, stirring occasionally

(8 minutes). Mix in tomato paste, wine, broth, and water. Bring to a boil; add

lentils. Simmer, uncovered, until the lentils are tender (about 45 minutes).

Stir in sherry, vinegar, mustard, nutmeg, and salt and pepper to taste. Garnish

with chives and some dill. Yields 8 servigs.
