Guest guest Posted October 25, 2008 Report Share Posted October 25, 2008 Celery, Green Bean and Tomato Toss 8 large outer stalks of celery 1 pound green beans 3 medium-sized tomatoes 3 cloves garlic, minced 1 tbsp. butter 2 tbsps. oil 2 tsps. oregano salt and pepper to taste Wash celery, cut off tops, and using a potato peeler, remove top layer of strings from outside stalks. Cut cross-wise into 1 " wide, diagonal slices. Wash and cut green beans into 1 " lengths. Peel and chop tomatoes. Using a large skillet (not cast-iron) saute garlic in butter and oil for a minute or so, then add green beans and oregano and saute for 5 minutes. Add celery, saute for 2 minutes, then add tomatoes.
