Guest guest Posted October 26, 2008 Report Share Posted October 26, 2008 Skordalia - A garlicky dip for bread Ingredients: 1 large head of garlic 4 potatoes, cooked and peeled 3 slices of bread, crusts removed The juice of 3-4 lemons 1/2 c olive oil Directions: Combine the lemon juice, olive oil and some salt in a food processor. Add the garlic, peeled and crushed. Add potatoes. Wet the bread and squeeze out the water. Add the bread to the mixture. Puree. Serve with pita bread or crackers or French bread as a dip.
