ZUCCHINI CRAB CAKES

Thank you Dee and i think Donna for advice on where to buy the

 

bay seasoning and where to locate the recipe for DIY .

 

Made them today and even with 2 ingredients short in the seasoning

 

everybody liked them. thank you.

They make a great New Orleans style Po Boy, too. I made French bread one day

then the crabless cakes the next morning and dressed the po boy out in

traditional finery (tomatoes, mayo, lettuce, pickles). I didn't feel like

waiting for lunch to have mine so I had it for breakfast. Well, I had SOME for

breakfast. The livestock here graciously concented to take care of a good

portion of the po boy.

 

Speaking money wise: our closest grocery store charges close to $10 a pound for

crab meat. I grew the zucchinni for about 50 cents, as did the rest of the

veggies on the sandwich, including the pickles (refrigerator bread and butter

pickles with onion) and made the bread,

These are on my list to try, and I second the kelp powder (I got it at Whole

Foods in the bulk section), I add it when I make mock tuna (tofu)!

Yes, I did, but they were so darn salty I tossed them! :( I think too much

Old Bay -- I used 1 tbsp for 2 cups zucchini and 1 cup bread crumbs. I have

another zucchini, I'll try with less Old Bay and I have a couple of Asian

markets close... might try kelp powder... Or the Low Sodium Old Bay!!! :)

I made them but the recipe made a lot of them.

I liked them and the two dogs in our household liked them

a lot too!
