Beets with Horseradish-Dill Butter

I prefer to use the golden beets but either work.

Beets with Horseradish-Dill Butter

 

1 bunch of beets, diced into large pieces

2 tbsps. butter

2 tbsps. prepared horseradish

1 tbsp. cider vinegar

1 tbsp. chopped dill

 

Steam beets in a covered medium-size saucepan for 30 minutes, or until tender or

steam the whole beets. Drain, peel skins, and place in a serving dish.. Keep

warm. Melt butter in a small saucepan, then stir in remaining ingredients. Pour

mixture over beets and toss well.

Never tried them with horseradish.

I love beets too. There is a whole beet recipe folder in the files.
