Cin Grilled/Broiled Vegetable-Hummus Roll-ups 4 carrots, peeled, and sliced on the diagonal 4 zucchini, sliced on diagonal 4 yellow squash, sliced on diagonal 1/4 cup balsamic vinegar 3 minced garlic cloves 1 teaspoon dried oregano 1 teaspoon dried basil 8 whole-wheat or white flour tortillas 1 cup hummus, homemade or store bought Preheat the grill or broiler. In a large bowl, toss the vegetables with the vinegar, garlic, oregano, and basil. Grill or broil until browned and tender on each side. Remove. Warm the tortillas 30 seconds under the broiler or wrapped in plastic in the microwave to soften. To assemble, spread 2 tablespoons of Hummus on each tortilla.
