Guest guest Posted October 28, 2008 Report Share Posted October 28, 2008 Easy Pumpkin Muffins 1 box yellow cake mix 1 can prepared pumpkin 1 tbsp pumpkin pie spice (or your own combination of pumpkin pie spices) 1 egg (optional) Mix all ingredients with an electric mixer -- this makes the batter smoother and makes for a prettier muffin. The egg helps the texture of the batter, too. Fill muffin cups 90% full, these muffins are heavy and don't rise much. Bake 40-45 minutes in 350 F oven. Audrey S.
