You will find many easy recipes in our files. Start in the sandwich and wrap folder. Those will be easy to start with. I've been vegetarian for a year, and I still can't really figure out what to do with tofu -- other than bread it and fry it, which tastes great but isn't the healthiest! It's made from soy beans. I'm going to try some of the recipes in the file, it should take the flavor of whatever you put it with -- vegetables, herbs, spices. Somebody mentioned BBQ tofu, I'm going to check out recipes for that! I didn't really have to give up that much, either. I haven't touched meat with bones or skin for several years, and I never really cared for turkey or chicken. Beef was more difficult (I live in Kansas City, a steak and BBQ city), but there are good meat substitutes available. They're no more expensive than meat, and they're quick and easy. Wal-mart carries Morningstar Farms products, and some Boca products. My mom thought my going vegetarian was ridiculous, but I got her to try a Boca burger (I kept telling her that it was as good as a hamburger, but no cholesterol!) She thought it was better than most fast food burgers and now takes them to work for lunch pretty often. Morningstar Farms has great corn dogs, I think Boca has better burgers. If you can find Boca chili or lasagna, those are good, too. Gardenburger is a brand I've seen at some Wal-marts (I'm thinking you probably have plenty of Wal-marts in Arkansas!) and their barbecue fake riblet is very good. There are lots more meatless products that are good, if you have a health food store near you. Audrey S.
