Audrey - Pumpkin Muffin Recipe

Hi,

I have just started fnally looking at some of the recipes, but I can't

find your Pumpkin receipe. Could you tell me where it is? I so love

pumpkin and have a box mix, but I would rather make my own.

The original recipe did not call for an egg -- you can imagine how

stiff the batter was when I made them the first time! :)

I don't know where it went... It's easy, though --

 

1 can pumpkin

1 box yellow cake mix

1 tbsp pumpkin pie spice

1 egg (optional)

 

Mixing with an electric mixer is best, makes for fluffier muffins

and eliminates little cake mix crumbles in the batter.

Fill your muffin tins almost totally full, because these suckers are heavy

and do not rise much.

350F, 35-45 min (they do take a long time to bake!)

 

Did you catch Judy talking about using cream cheese frosting and black

walnut flavoring? Mmm....

Thanks Audrey! Don't want to wait to long to make them and cream

cheese frosting is the only way to go and I just love the Black

Walnut idea to.

I didn't file it originally because of the clarification question that

came after it but now it's updated and in the Muffin folder in the

Breads file. :)
