Almond Biscuits (Cookies) (vegan)

I made these today and have nearly finished the lot :-( They are

wonderful and very easy to make.

Almond Biscuits

 

50g (2 oz) vegan margarine

25g (1 oz) demerara sugar

75g (3 oz) ground almonds

1/2 tsp almond essence

50g (2oz) plain flour, sifted

1/2 tsp baking powder

1 Tbsp non-dairy milk

 

Pre-heat oven to Gas Mark 4/1880C/350F. Cream margarine and sugar,

mix in ground almond and almond essence then sifted flour, baking

powder and non-dairy milk. Mix well together. Take heaped

teaspoonfuls of the mixture, roll into balls between the palms of the

hands. Flatten into biscuit shapes and place on a greased baking

sheet. Bake for about 10 minutes until golden brown. Cool for about 5

minutes on the baking sheet before placing on a wire rack to cool.

 

Makes about 16 small biscuits

 

Only make when you have company!

It can be substituted with turbinado sugar as you can see in the

following link. The Cook's Thesaurus http://www.foodsubs.com/ is a

great resource for finding explanations and substitutions for

ingredients you don't recognise - I use it all the time.
