Guest guest Posted November 2, 2008 Report Share Posted November 2, 2008 I used to use a LOT of butter, to cook with, for toast, etc. but I was looking for an everyday butter that actually had some nutritional value and was lower in fat. So I decided to make my own. I didn't look in the recipe file for this, so someone may have already posted something like this, but here's how I did it. I took my homemade soy yogurt and made the yogurt cheese by putting it in some cheesecloth and a strainer and left it in the fridge over night. Nothing can really 'replace' butter, but this ratio comes pretty close in taste and texture, and it compliments the twang of the yogurt. I've tried it with 'Butter Buds' brand and it was horrible, so after trial and error this is what tasted the most like the real thing, and so far as i know it is dairy free, which is just a personal preference for me. 1 pound (a pint) of yogurt cheese 2 Tablespoon of butter powder (i used barry farm which is supposed to be dairy free) 1 teaspoon of McCormick Butter Flavor Salt to taste Whip it with your mixer and put it in the fridge. The only fat is whatever is in the soy, and that's not bad fat. So far I stirred some in my veggie pasta tonight, and i put garlic and herbs in some and made some garlic toast..
