For me, if it smells ok, and looks ok, i bring it up to temp and eat it. You'll know it when its gone bad, the smell will tell you. Guest guest Posted November 3, 2008 Report Share Posted November 3, 2008 I would not keep anything longer than 4-5 days. And at that point, I wouldn't freeze it either. Bacteria grows at an extremely rapid rate....sometimes, you will not smell anything bad, but it already has bacteria in it. If you don't think you'll eat everything within this time frame, I suggest you freeze it as soon as you make it. When in doubt, throw it out! Why would you want to make yourself sick? If so it might be a 4th day for beans but that's it. I try to make just enough food so I can eat it up the next day. I'm always afraid of getting sick on leftover food. I don't enjoy eating out either. After watching that guy stomping on the garlic in his boots?awhile back it confirmed for me that we just never know how our food is prepared.? Guest guest Posted November 3, 2008 Report Share Posted November 3, 2008 You know another thing I do is take make dinner tonight and tonorrow I will make a great soup with the other half of the oniob, toss in veg broth, a diced potato, celery stalk and some of the left over steamed rice and keep on adding this and that and have a wonder hot bowl of soup. I had Montezuma's revenge from brushing my teeth with the water in Yucatan years ago and I never ever want to get sick like that again. I was sick for months and lost almost 40 lbs. I sure don't trust that if it smells bad or looks bad thing. I believe it's dangerous long before it smells. Guest guest Posted November 3, 2008 Report Share Posted November 3, 2008 I would really like to make it as I need it, but to steer clear of straight convenience foods, I need to make 3-4 meals on Sunday evening to last us through the week. I do try to freeze after making what I can for the following few weeks, though. I do get sick of leftovers, though, and since my hubby is now working out of town, my daughter and I can't eat the same thing for every lunch and dinner. Wel, I may be able to, but she wouldn't fall for it. Growing up, my mom always taught us 5 days, and that was for animal products, so I feel my food should last a little bit longer. My dad always ate ALL the leftovers, so we never really had to worry about it much. If I know I won't be able to eat it all in 2 days (3 days tops) then I freeze the other portions the first night. I'm single and live alone, so I make 1/2 recipes, and then usually end up freezing at least 1/3 of that. Two meals, one supper and one lunch the next day. I've never had food poisoning (knock on wood!!) but I HATE to throw up, so I take no chances. Audrey S. I've had produce last for a couple of weeks in the vegetable bin, many times. Dairy and soy already have a long refrigerator shelf life. With things that I cook or bake, I usually will eat it up to a week, if it has been outside of the refrigerator very little since made. I've not gotten sick off of food yet. The rule of thumb to kill bacteria in a food, is to simmer it covered for 10 minutes, to kill anything to may be invisible to the eye or taste. Simmering would be for items that have been cooked on the stove.
