They heard and protect children the same way they would heard and portect a sheep. I had a Border Collie when my granddaughter lived with me when she was a baby. I trusted that dog completely to keep track of the baby and keep her safe when she was out in the yard. Of course, I was never very far away, but no one would come in the yard with the dog on guard.
