Guest guest
I make this for brunch when I have guests. They eat it right us. Tastes good with some salsa and or guacamole on top. DM Mashed Potato Omelet Mash 1 pound of potatoes with salt, pepper and butter. Beat 5-6 eggs, add sautéed onions or mushrooms if desired and mix with potatoes. Pour into a well-buttered round baking pan and bake in a preheated 325-degree oven until the eggs are set, approximately 40 minutes.

Guest guest
Thank you for the recipie! YUM! We had it for brunch yesterday... Made half, cooked in 2 personal casserole dishes, used chunky smashed potatoes, and topped with a wee bit of smoked gouda that had been hanging out in the fridge for a while. Served with a " Spanish " (chunky salsa & olives) brown rice, smashed pinto beans, and a salad. YUM! YUM! YUUUUUUMMY! anGELA Sent via BlackBerry from T-Mobile D M <deranged_millionaire Sat, 8 Nov 2008 19:28:16 <gourmet-soups-stews-side_dishes-and-dinner_pies > Mashed Potato Omelet I make this for brunch when I have guests.
