Mashed Potato Omelet

I make this for brunch when I have guests.  They eat it right us.  Tastes good

with some salsa and or guacamole on top.

Mashed Potato Omelet

 

Mash 1 pound of potatoes with salt, pepper and butter. Beat 5-6 eggs, add

sautéed onions or mushrooms if desired and mix with potatoes. Pour into a

well-buttered round baking pan and bake in a preheated 325-degree oven until the

eggs are set, approximately 40 minutes.

Sounds like a great way to use those leftover mashed potatoes...if you ever have

leftover mashed potatoes!

We had it for brunch yesterday... Made half, cooked in 2 personal casserole

dishes, used chunky smashed potatoes, and topped with a wee bit of smoked gouda

that had been hanging out in the fridge for a while. Served with a " Spanish "

(chunky salsa & olives) brown rice, smashed pinto beans, and a salad.

 

YUM! YUM! YUUUUUUMMY!
