Guest guest Posted November 9, 2008 Report Share Posted November 9, 2008 Wow,i was just reading the vegetarian food pyramid,and Im happy.I eat cereal,toast,bagels,sandwitches,all kinds of carbs.I thought maybe I was doing something wrong as we should be eating more VEGETABLES than anything.What do u think? Guest guest Posted November 9, 2008 Report Share Posted November 9, 2008 I'm not a nutritionist and I know everyone is different, but I don't think that 'too many carbs' should be a concern for vegetarians who are eating a lot of grains, fresh veggies, fruits, beans and other good sources and variety of proteins, and of course, enough water. My serving size for grains is usually about 1/4 cup, rice 1/2 cup, but right along side that is some fruit, sprouts or whatever my body is telling me I need at the time. This morning I needed a 1/2 cup of brown rice with some maple syrup, some okara hot sausage-spiced patties AND a little tofu scramble with all the leftover veggies in my fridge (i was hungry i must be doing something right, i'm losing about a pound week, and I eat a LOT of grains, especially brown rice, i love the stuff almost as much as i love chocolate! At the very moment i'm nibbling on a piece of dark chocolate and drinking some barley tea (thanks donna!) Breads/grains have no fat at all except what you put on/cook them in. Carbs are a great energy source, but stick to complex ones. Guest guest Posted November 9, 2008 Report Share Posted November 9, 2008 I am taking a nutrition class right now and was surprised to learn that you are supposed to get MOST of your energy from carbs - even if you are a meat eater. The key is that you should try to eat whole grains and complex carbs (instead of simple carbs and sugar). These turn into sugar slowly and actually help keep your blood sugar stable.
