Guest guest
I learned this recipe in Morocco from a family who took me in for two months after I'd broken my wrist climbing down a mountain. This recipe makes at least 4 servings with a little extra. 5 large potatoes 3 big carrots 1 onion 3-5 vegetarian bullion cubes (if small use 5 - if large use 3) garlic, pepper and salt to taste Peel and cut the vegetables into cubes. Cover with water, throw in the bullion cubes and bring to boil. After about 15 to 20 minutes (when the veges are cooked) take off the stove and scoop most of it into a blender and puree. Leave some nice chunks of the cooked vegetables to chew on - pour it all together then serve in bowls with a side of buttered bread. On a cold day it is so warming and filling even the most hardened meat eater raves about it and is the cheapest meal you can make.

Barbara, Thanks for that simple and delicious recipe. And what a fascinating story of how you came by it! ~ irene
