I make my own soy milk and tofu, so I have a lot of spent soy bean mush This is a way to use up some of it for a nice spicy hot breakfast. Goes nice with a pancakes *drool* 1 pound of fresh okara with most of the liquid squeezed out (2 cups) Add a pinch of each of the following (about 1/2 teaspoon) sea salt black pepper sage thyme rosemary cayenne red pepper flakes nutmeg brown sugar Add: 1 Tablespoon of good maple syrup if you like maple Mix 2 teaspoons of corn starch in cold water Add everything in a bowl and mix. Form into small patties (i make mine about 2 inches by 1/2 inch thick) Dust in flour or coating of choice, shake off extra flour and cook in oiled pan on medium heat for about 4 minutes on each side until nicely brown, eat. If you're using the soy from your soy milk maker, it is already cooked so you can brown on higher heat for less time.
