Guest guest Posted November 10, 2008 Report Share Posted November 10, 2008 Easy Nut Scrapple 2 cups corn meal (yellow or white) 1 cup hominy (yellow or white) 5 cups boiling water 1 teaspoon salt 2 1/4 cups chopped nuts (your choice) Chopped green garnishes Moisten the corn meal and hominy in cold water, then stir in gradually the boiling water and cook in a double boiler till like mush. Then stir in the nuts and pour into a buttered baking tin. Set aside to cool. When cold, slice and fry in butter. Serve with green garnishings for a dinner dish. Serves 4.
