I may have tried a commercial kind a long time ago (probably SILK brand, I don't know), but I have no memory of what it was like. Is it bland (like silken tofu)? Is it at all tart, like dairy milk yogurt is? If you flavor it (with vanilla, for example), does the flavor fight with other flavors inherent in the soy itself? Does it taste " beany " or " chalky " ? Is the texture smooth or grainy? I am very curious about this. I don't have any place to purchase soy yogurt close by--our only local health food store recently closed--(I'm sad!)--so the next time I am in Springfield, I maybe will try a carton from the large health food store there. I like soy milk, but don't make my own at home. I cautiously eat tofu--as long as it's not plain, but mixed with lots of other flavoring ingredients...I am wondering whether soy yogurt is closer to being like the soy milk or like tofu? Guest guest Posted November 11, 2008 Report Share Posted November 11, 2008 soy yogurt is milder in taste and tends to be maybe 'thinner' than standard yogurt, but is, in my humble opinion, far superior in flavor. I prefer homemade soy yogurt from homemade soy milk, so that I can control what flavor is there. I remove the outer skins of the beans before making the milk which eliminates any beany taste. I mix the yogurt cultures with some warm milk before blending it with the rest of the batch to provide for good distribution and preventing any grainy texture. Silk is the only store bought brand I could recommend, but once you've tried homemade, you won't want store bought. The longer you incubate the yogurt, up to 14 hours, the more tarty it gets (is tarty a word!?) I incubate mine for about 10 and is just right. It is so mild in flavor and has a slight 'nutty' flavor so vanilla, fruits and even savory flavors are complimented well. If you are far from health food stores like I am, it is very economical to buy organic soy beans in bulk on the net and make your own milk, yogurt and even tofu.
