Guest guest Posted November 13, 2008 Report Share Posted November 13, 2008 Double-Spaghetti Squash 1 medium spaghetti squash, about 3 pounds 8 ounces uncooked spaghetti, broken in half 1/2 cup finely chopped fresh parsley or another green 4 tablespoons grated Parmesan cheese or nutritional yeast 4 tablespoons butter or margarine, melted 2 tablespoon fresh oregano or cilantro leaves 1 teaspoon garlic salt or a fresh squeezed clove or 2 Add some dried herbs if you like when you toss. You can cut spaghetti squash in half lengthwise and seed, boil in water for 20 mins to 1/2 hr and remove strands when done and save shells. Or Heat oven to 400 degrees. Pierce squash with fork; place in ungreased square baking dish, 8x8x2 inches. Bake uncovered about 1 hour 30 minutes or until tender. Cut squash lengthwise in half; remove seeds and fibers. Remove spaghetti-like strands with 2 forks. Cook and drain spaghetti as directed on package, drain. Toss squash, spaghetti and remaining ingredients. Return spaghetti mixture to squash shells to serve. Serves 4 " I have done my best " , that is about all the philosophy of living that one needs.... Lin-yutang.
