Guest guest Posted November 13, 2008 Report Share Posted November 13, 2008 I copied off a vegan baked ziti recipe from the web awhile back and made it up last weekend....it's great! So we will be having leftovers tonight with hot garlic bread. The recipe called for mixing (I am at work so I don't have the recipe in front of me) the tofu up with some herbs and spices and that replaces the typical ricotta cheese...I really could not tell the difference.......it's a keeper recipe. I also made the lentil and sweet potato stew off of this list (sorry again, I don't remember who submitted it) and I just loved the flavor. It was a crockpot meal and I did have to add more broth than asked for, but that is another recipe I will make again. Perfect chance to thank everyone for the recipes they submit.....I still feel like a " flexitarian " , but the recipes here are so good that my meat eating days are few and far between!!
