Homemade Grapeless Nuts Cereal

I was out of breakfast cereal, so instead of being a good citizen, I started

work late this morning and made some.  I found a lot of recipes on the net for

'grape nut' style cereals and adapted a combination of a few of them and came up

with this, and it worked out well.  

Mix together 2 1/2 cups of your favorite whole grain flours or process your own

in the food processor.  I tried the following:

 

1/4 cup of ground rye

1/4 cup of ground oats

1 cup of ground wheat berries

1 cup of ground barley

 

Add:

 

1 Tablespoon of baking soda

1 Teaspoon of sea salt

1/2 cup cane sugar

1 Tablespoon of Agave

1 Tablespoon oil

1 cup souring soy milk (a good way to get rid of fresh milk that's been around

for a couple days - you can mix a tablespoon of vinegar in fresh milk for the

same effect)

1/4 cup soy yogurt (sub 1/4 of blended canned pear or applesauce would work just

as well I think)

pinch of nutmeg (I'd think cinn. would work ok as well)

1 t vanilla if you want

 

Mix just until well blended and pour it in a greased 8 " pan (i used a 8 " square)

 

Bake in preheated 350 oven for about 30 minutes

 

Cool completely.  This goes quicker if you cut it into smaller squares

 

AFter it has cooled , crumble it up into small pieces and spread evenly on a

sheet pan.

 

Bake again at 225 F for a whole hour, taking it out every 15 minutes or so,

stirring it and breaking up any larger pieces.

 

After you take it out of the oven, add some course ground raw almonds and dried

cherries or whatever fruit and seed and nut combination you like the best

 

Walnuts and cranberry would work well - i used cherries and almonds and some

roasted sunflower seeds

 

I almost filled up 2 quart mason jars.  It's a little crunchy to eat alone, I

like mine with soy milk warmed up in the microwave.
