Guest guest Posted November 14, 2008 Report Share Posted November 14, 2008 Tofu and Brown Rice Casserole 4 1/2 teaspoons oil (I use olive oil) 1 1/2 tablespoons butter 1-2 medium onions, chopped 1 cup cooked brown rice 9-12 ounces firm tofu (I use a box extra-firm Mori-Nu) Salt and Pepper to taste 1 cup milk - cow or soy Bread Crumbs Grated cheese Preheat oven to 350F. Heat large skillet and coat with 2 teaspoons of oil and all of the butter. Add onion and saute until soft and lightly browned. Add cooked rice, then tofu, saute each for a few minutes. Season with salt and pepper. Place tofu-onion mixture in a casserole dish coated with the remaining oil. Pour in milk. Cover with bread crumbs, then cheese.
