Oh I will make these.  I love coconut.

I think I will toast the coconut before I toss it into the mix.

My copy of this recipe is called " Mom's Cookies " , but my Mom's recipe

is called " Amy's Cookies. " Neither of us knows where the recipe came

from. Weird, huh? I haven't seen this recipe in any cookbook. I did

find a very similar recipe online in a blog, and think it was the son

of one of my old coworkers to whom I gave the recipe. Everyone loves

these! One of my husband's old co-workers called them the " Best F*ing

Cookies " he'd ever had. Didn't think that was an appropriate name

for them though. I hope you like them. You are all such food

experts, it would be interesting to get your opinions!

 

Mom's Cookies (oatmeal, coconut, date, pecan)

 

2 sticks butter

1 cup brown sugar

1 cup white sugar

2 eggs

2 tsp baking powder

1 tsp baking soda

2 cups flour

1 pinch salt

2 cups shredded coconut

2 cups oatmeal

1 cup chopped dates

1 cup chopped pecans

 

Preheat oven to 325 degrees.

Cream sugars and butter until fluffy.

Add eggs and mix well.

Add remaining ingredients and mix.

Line cookie sheet with baking parchment.

Drop by teaspoon-full on parchment.

Flatten.

Bake at 325 degrees for 10-12 minutes.
