You'll going to love being a vegetarian for sure and be healthy with all these great recipes you try and share with us. Guest guest Posted November 17, 2008 Report Share Posted November 17, 2008 Pete, here are a couple of other good uses I have found for miso: - use it as a substitute for the beef broth that is called for in French Onion soup (the dark or red both work well) - use the yellow miso as a substitute for parmesan in classic basil pesto - mix 1/2 light miso and 1/2 grated ginger together, add a few drop of dark sesame oil. Slit the long eggplants after lightly broiling them and stuff with this mix. Add sesame seeds on top and broil the tops until golden.
