Cassie - Creamy orzo

Cassie,

 

I looked for the original recipe and could not find it so I will give

the one I use when I make it my way.

 

Creamy Orzo with greens and corn

 

4 cups collard greens or kale, chopped

3/4 cups dry orzo

1 medium onion, diced

2 cloves garlic, minced

Silk Creamer or other substitute for heavy whipping cream

3 medium ears or corn or 1 can of corn, drained

1/4 cup parmesan cheese

1 Tbsp lemon juice

Salt and Pepper to taste

 

Chop the greens and depending on how you like yours set aside or steam

for softer greens. I steam mine while all the ingredients are being

prepared.

 

Prepare the orzo according to the directions. Drain and set aside do

not rise.

 

While the orzo is cooking, saute the onion and garlic in a little bit

of oil or broth for about three minutes. Add the corn and cook for

another three to five minutes. Add the greens, orzo lemon juice and

cheese and cook for five minutes. Add enough cream to the mixture to

make it creamy as you desire. I usually use about a half a cup or

more. Cook until the cream is hot, about 3-5 minutes.
