If you are using the fresh one in scones, you might want to add a little more sugar to the scone recipe, as scones are usually not very sweet. It would be great with some orange zest added to the batter also. Add them frozen to your batter, this way the berries won't burst open and bleed into your batter, same with blueberries, just toss them in frozen. That's what I do with them.
