Cranberries

I've never cooked with cranberries, but I have a recipe for scones that I

want to try and throw some in. Can you just put them into batter the way you

do other berries or should they be dried?

When I add it to sweet bread, I add the fresh berries, just like I would the

dried one. If you are using the fresh one in scones, you might want to add a

little more sugar to the scone recipe, as scones are usually not very sweet.

It would be great with some orange zest added to the batter also.

You can freeze them up to one year.  Add them frozen to your batter, this way

the berries won't burst open and bleed into your batter, same with blueberries,

just toss them in frozen. 

That's what I do with them.  I also use dried berries and crisins as a sub.
