VIDALIA ONION VINAIGRETTE 1 large Vidalia onion, chopped 1 tablespoon vegetable oil 1/2 cup cider vinegar 1 tablespoon honey 1 tablespoon lemon Juice 1 teaspoon DiJon mustard 1 teaspoon salt 1/2 teaspoon pepper 3/4 cup vegetable oil COOK onion in 1 tablespoon hot oil in a large skillet over low heat, stirring constantly, 20 minutes or until onion is caramel colored. PROCESS onion, vinegar, and next 5 ingredients in a blender or food processor until smooth. Turn blender on high; add 3/4 cup oil in a slow, steady stream. Yield:1 1/2 cups.
