Thanksgiving dinner

Well, I hope this didn't send out when Mamma Katz walked on the keyboard, so

apologies if it did.

 

Since it is just going to be the two of us for Thanksgiving this year, I'm

thinking of just doing a UK meets the US High Tea sort of meal with a couple of

hot dishes, pecan pie and pumpkin pie. The tea will be our usual Irish Breakfast

blend since Carl likes that and won't even try any other teas.

 

For one hot dish, I'm thinking of a stuffed onion casserole that we particularly

like, which I have redone as a layered casserole rather than fool around with

making onion shells, parboiling, blah blah blah. The stuffing part is made of

chopped broccoli mixed in a bit of bechamel sauce. I usually slice the onions

farily thickly, saute in butter and put them in the bottom of the casserole and

top with the brocolli and bechamel (white sauce), tossing some grated cheese on

top. Very simple and good and easily adapted by anyone who doesn't do dairy. If

I find some nice button mushrooms at a good price, I'll saute some of them as

another hot dish. I have already done the rolls and have them in the freezer.

When I make rolls, I double or triple the ingredients and cook them just long

enough to be cooked but not browned, then throw them into the freezer to be

eaten another time. Instant brown and serve rolls.

 

We'll probably be munching our entire Thanksgiving - football day - but that

will be raw veggies and light ranch dressing or a layered salad with corn chips

(refried beans, guacamole, sour cream, shredded cheese, salsa). Ugh, I'm

feeling horribly overfed already.

 

We'll have pumpkin pie and lemon bars for after, as if we'll need any more

calories after all this.

 

Of course the husband person thinks macaroni and cheese would be enough for him,

but he can have that anytime!
