Greetings from Manitoba, Canada, folks!

 

I do most of my cooking in a solar oven, and am primarily interested in

one-pot meals to try out, so I'm looking forward to seeing some great

recipes and to looking through the comprehensive list archive for veggie

recipes that fit the bill. When people hear I'm a " solar cook " I inevitably

get a barrage of replies for more information, so in anticipation of this

I've set a page with a photo of my oven (link below), as well as technical

details, etc. I don't sell these, and the manufacturer is now out of

business, so please don't ask :-)

 

Here's one I

got from a colleague that I recently made.

It really is delicious!

 

 

Lebanese Lentil Stew

 

2 large onions finely chopped

sweat the onions in a little olive oil till translucent

add 2 cloves of garlic minced - for 3 minutes

!/2 pkg. brown Lentils

3 large potatoes cubed (1/4 inch)

 

Put this lot into a pot with enough water to cover and simmer for 45 minutes

until all are comfortably soft

Add a large bunch of Swiss Chard - remove the centre stem & chop coarsely

add to the Lentil mix.

Add the juice of two lemons - taste you may want more

Salt & Pepper to taste (and lots of Tabasco works fine for me!)

Hi Richard.

 

I've been looking at solar cookers and have wondered how well they do in the

colder/darker months. Since you are a few degrees north of me I figure a

review from you would be helpful. So what's been your experience?
