I love cranberries -- but the salad we always made for Thanksgiving had both jello and marshmallows in it, so I'd like to not do that. Guest guest Posted November 18, 2008 Report Share Posted November 18, 2008 I just just for my cranberries this year a bag of cranberries, 2 pears chopped, a little grated fresh ginger and I think 3/4 cup suger? maybe 1/2? a tiny bit of water. Just cook this in a pan until the consistency that you want it. Cranberry, Apricot, and Clementine Relish 4c (1lb) fresh or frozen cranberries 1 (10oz) jar all-fruit apricot spread 1/3c golden raisins 1/3c sugar 2 clementine oranges Put cranberries, apricot spread, raisins, and sugar in a food processor. Grate 1 tsp zest from clementines and reserve. Peel clementines and separate into sections, add to food processor. Pulse mixture until relish is finely chopped Stir in reserved zest. While I haven't tried this yet, it sounds great but I don't know about for Thanksgiving. Barbara Cranberry Almond Coleslaw 5 cups shredded cabbage 1/2 cups almonds, toasted 1 1/2 cups dried cranberries 1/2 cup celery, diced 1/4 cup chopped green onions, white and green parts 1/2 cups chopped green bell pepper Dressing: 1/2 cup mayonnaise 1 tablespoon sweet pickle relish 1 tablespoon honey mustard 1 tablespoon honey Salt and pepper sunflower seeds optional Combine cabbage, almonds, cranberries, celery, green onions, and green pepper in a large plastic bowl with a snap-on lid. Combine all dressing ingredients, adding salt and pepper to taste, and refrigerate until ready to serve. Pour dressing over slaw just before serving. Stir well.
