One is still having my Mom when the doctors told me there way no possible way she would make it past April 7 and I proved them wrong by making her pureed food and feeding her each day. Two would be my health, you can't buy good health .. Three would be the group, all the wonderful members. The friendships I've formed, sharing one anothers recipes, stories, plenty of laughs and knowledge we gain from one another. A heartfelt thanks to Chanda for believing in me when I didn't believe in myself and didn't want to start a group and she woudnt take no for an answer and started it anyway. Now I will have to write back with menu info. I'm still trying to make the menu and get a head count. Guest guest Posted November 18, 2008 Report Share Posted November 18, 2008 Great question, Judy!? I have so much to be thankful for I don't even know where to begin, but I'll try... First off, I'm beyond grateful for my wonderful parents who afforded me an idyllic childhood.? While we certainly weren't rich in material things, I had the most important thing of all...the gift of unconditional love.??I, in turn have given this gift to my two beautiful daughters and I?hope that?they will pass it on to their offspring.? In these tough times I'm grateful that I have a secure job, and that at ripe old age of 65 I feel 25, and am physically well enough to go to that job every day.? Some are not so fortunate.? Again, while I may not be rich in material things, I have everything I need and then some....freedom to live my life as I see fit, peace of mind, contentment.? A friend sent me a card once that I treasure.? It reads... " to know when you have enough, is to be rich beyond measure. " ? So very, very, true. ? While I live alone with only a cat for company, I'm never lonely or bored and have a lot of solo activities to fill up my days..there are never enough hours to pursue them all and I've so often wished that I could do more than one thing at a time.??As you age, you begin thinking about running out of time and there's still so much left that you want to learn and do.? As for my Thanksgiving menu, that's kind of up in the air.? I think I'll be alone (have some?invites, but some are too noisy and the rest?are overnighters and I never leave Jonah (cat in residence) alone overnight.? Since I lost my other two, he's very needy and on the few occasions that I've left him the person who has cared for him has told me that he's beside himself when I'm gone)?so.... I just may go all out and prepare all the trimmings or I may just do nothing at all...depends on the mood of the day.? The best part is that I can choose how to spend it!? Guest guest Posted November 18, 2008 Report Share Posted November 18, 2008 I'm so thankful for the beautiful fall trees and drives in the mountains to enjoy their splendor, great apples selections in the stores and orchards, for autumn fall decorations all around my home that make me smile and festive the whole season, sports that my children can play on week days instead of on Saturday(the Sabbath), for my dear family and friends, a job, good health and food to eat, freedom to homeschool and celebrate my faith. And for all of you and this wonderful group with great recipes to wow our family, friends and self with. I'm in a time in my life where I am learning alot about myself and figuring out exactly what I want to do with my life. For that reason I am very thankful for my teachers and mentors. They have opened many doors for me and helped me start a wonderful journey. As for my Thanksgiving day plans, not sure where I'll be yet. What ever happens I'm sure it will be a very nice day. I read a quote the other day that stated the most valuable thing in your home is the people, and I believe that to be so true. I am thankful for my furkids, the wonderful people I volunteer with at the farm animal rescue, and of course this group and all the wonderful people here. Without this group and all of you I don't think I would have ever been able to become vegetarian and stick with it. Thanks for much!! Now for my menu. Let me say this year will test my skills for sure. Almost everything I am making is homemade. Donna, have your phone ready, LOL. I'm going to see my sister in Denver for Thanksgiving, and we will be having pasta with vodka sauce (her recipe, she's very excited about it -- if I'm as excited as she is after I've had it, I'll post it!) Very untraditional Thanksgiving, but that's ok, it will just be the two of us. Probably a salad and bread, and pumpkin pie, that's a must-have! I've been told to bring my sugar cookie recipe, she bought a turkey cookie cutter! My sister has been taking her dog to visit a nursing home, so we may go to the nursing home after we eat. I know there are always lots of people who aren't able to leave, or have no family or friends to visit. And Belle the pug mix is always a hit! Audrey S. Being able to give my children everything they need (but not everything they want). Going shopping for Operation Christmas Child today with my 5 and 3 year old boys and not having them ask for a single thing for themselves. Seeing the boys (even at their ages) seem genuinely concerned for children who do not have as much as we do in Canada (or anything for that matter). I really think they are starting to understand (the older one for sure). There is so much more...that's just this morning. What we had in October... Vege casserole made with Worthington Smoked Turk*y Loaf wild rice, mushroom, walnut, and dried cranberry stuffing burbon sweet potatos savoury sweet potatos acron squash with quinoa corn rolls mashed potatos and mushroom gravey beens corn there is more but I honestly can't remember right now! I am also very thankful that the baked raviolis have been deleted from the Thanksgiving dinner while camping menu (it was deemed that butternut squash could taste too different from sugar pumpkin). So our menu is simpler but looking good, and I am sure we will be thankful for the food as well: Baked butternut and acorn squash with cinnamon, nutmeg, brown sugar and butter. Vegan dirty rice (reheated) Fresh garden green beans and lima bean shellies sauteed with fresh onions and garlic. Grilled eggplant with miso, ginger and sesame seeds. Mashed purple potatoes. Stuffed mirlitons (chayote squash) fruit salad: peach slices, citrus slices and fresh pomegranate seeds.
