I'm sure someone has done this before, i remember reading it somewhere - I

combined several ideas just to experiment a bit.

block of firm tofu

1/4 c good soy sauce

1/4 c water

1 T liquid smoke

red pepper flakes

black pepper

1 egg equiv egg replacer or 1 egg beaten plus tablespoon water

bread crumbs

i cut my tofu into 1/2 inch strips

place on clean kitchen towel or paper towels

wrap the pieces up in the towel

put a cutting board or something flat on top of them

weigh down with a few cans

let sit for 30 minutes

meanwhile make marinade with soy sauce, liquid smoke and water and peppers

remove tofu from towel, careful to break them.

cover put in fridge for at least 1/2 hour

drain as much liquid from tofu without disturbing the tofu

coat in corn starch shaking off any excess

dunk in egg mixture

coat with bread crumbs

fry in oil tossing carefully until all sides are golden

i just thought it was a good flavor combo if anyone wants to try it

Pete I will try this.

I make tofu fish sticks and the recipe is in the tofu folder. I make them very

close to your recipe, few different ingredients.
