Guest guest Posted November 18, 2008 Report Share Posted November 18, 2008 Apple Cranberry Muffins (adapted from recipe from allrecipes.com, just can't remember which one) 1/2 cup favorite applesauce 1/2 cup cranberry sauce 1/3 cup vegetable oil 2 egg equiv egg replacer with liquid for one egg (or 1 egg, beaten) 3/4 cup all-purpose flour 1/4 cup whole wheat flour 1/2 cup cane sugar 1 teaspoon baking soda 1 teaspoon ground cinnamon 1/2 teaspoon salt 1 cup fresh or frozen cranberries, chopped 1/2 cup pecans, chopped DIRECTIONS Preheated 350 F oven. Spray or grease and flour a muffin pan. In a small bowl, mix together applesauce, oil and egg replacer. In a large bowl, mix flour, sugar, baking soda, cinnamon and salt. Make a well in the center, and pour in applesauce mixture. Stir until just moistened (don't overmix, lumps are ok). Fold in cranberries and pecans. Fill muffin cups 2/3 full.
