In a small bowl, combine these next three ingredients:

3 Tbs vegan margarine melted

1/2 cup soy milk

Make a well in the dry ingredients and then pour the soy

into an ungreased 8 inch square baking pan.

Mix together this topping and sprinkle over the batter:

1/2 cup sugar

Pour 1 cup of very hot coffee over the top of everything and bake

Glad you liked it, Pete.

It is an old recipe from a newspaper that my

husband's mom clipped out many, many years ago.

I am not a vegan, and had been using dairy and butter

in it forever with yummy results. But after seeing how

easily it could be converted to vegan for the members

on my feral veg group, I gave it a try, and it was yummy!

If you are lacto-ovo like me, you can use the butter

and milk in this recipe and it will turn out.

I like to serve this over a scoop of coffee ice cream.

Rice Dream is good too, for vegans.
