Guest guest Posted November 18, 2008 Report Share Posted November 18, 2008 YUM, these turned out to be really reallllly good, thanks PT Tropical Mystery Sift all of these dry ingredients together in one bowl: 3/4 cup sugar 1 cup all-purpose flour 2 tsp baking powder 1/8 tsp salt 1 tsp ground cinnamon 1/2 tsp ground allspice 1/8 tsp ground cloves 1/2 tsp ground nutmeg In a small bowl, combine these next three ingredients: 3 Tbs vegan margarine melted 1/2 cup soy milk 1 tsp vanilla extract Make a well in the dry ingredients and then pour the soy milk mixture into it; blend with a fork until smooth. Pour this into an ungreased 8 inch square baking pan. Mix together this topping and sprinkle over the batter: 1/2 cup brown sugar 1/2 cup sugar 4 Tbs cocoa powder Pour 1 cup of very hot coffee over the top of everything and bake at 350 degrees for 40 to 45 minutes. I am not a vegan, and had been using dairy and butter in it forever with yummy results. But after seeing how easily it could be converted to vegan for the members on my feral veg group, I gave it a try, and it was yummy! If you are lacto-ovo like me, you can use the butter and milk in this recipe and it will turn out. I like to serve this over a scoop of coffee ice cream.
