Guest guest
When I moved a few years ago, I gave away some cookbooks that I rarely used. Apparently I gave away a book containing one recipe that I did want. I don't remember which cookbook it was -- it might have been one of the Moosewood family (not Mollie Katzen's, one of the later books). Anyway, here's what I remember about the recipe: The base was pureed winter squash, probably butternut. (Butternut might have been in the recipe title, but I can't swear to anything.) There was one sweet potato, diced and cooked in the soup. There might have been corn added, but I'm not sure whether that was in the original recipe or whether that was something I added because my family likes the crunch of corn kernels in a smooth soup. I can probably come up with a reasonable facsimile on my own, but if this soup recipe sounds familiar to anyone, and if you have the time to type in the basic ingredients/instructions, I would greatly appreciate it.
