ideas for corn tortillas, anyone?

This is really up to them.  Ask them.  You can make beans and rice with mild

salsa, they are delicious warmed with butter, I will warm one, spread hemo

butter on it and wrap around a banana.  You can use condiments and wrap around a

tofu dog.

Fry them and make tacos or tostadas.  Or use them steamed and make soft tacos.

I'm in L.A. and we use tortilla for just about anything.

Okay, my 8-yr old boy had his first taste of tortillas, and he liked them!

So I found a beautiful old cast-iron 7 " round tortilla press, plated with

stainless steel. I just picked up a bag of minsa (nixtamilized corn masa

mix), and have the instructions on the bag for making the tortillas, which

I'd like to do tonight.

Question is, what sort of fillings have folks found that their kids like?

Richard,

I've found that kids like tortillas better than bread. They love the

idea of wrapping up the little *bundles* with their favorite fillings.

I say give them a choice. Place bowls of their favorites on the table

and let them choose. My favorite is a piece of soy cheese and lettuce.

The flower tortilla makes a great peanut butter and jelly *wrap*. So

easy to carry with and eat anywhere. Now that you have the masa why not

try making tamales. They are just fantastic home made and you can fill

them with rice, beans or even a fruit mix.

What I do with maseca is make pupusas. Just make two separate corn

tortillas with a tortilla maker 9or by hand and a rolling pin). Press

the two tortillas together with something in the center. Black beans

and cheese is a popular one, could be any type of beans, cheese,

vegetables like peppers or zucchini. Then you pan fry the 'pupusa' on

each side until golden, sometimes it puffs up.

-Well, my DS of course, likes me*t in his tacos, but I made a

vegetarian version and he liked it as well.

 

Warm Honeyed Black bean and Corn Salsa filling-makes 6-8 servings

(depends on how much you stuff in your tortilla)

 

2T. olive oil

1 medium red onion, chopped

2 cloves garlic, chopped

1 t. ground cumin

salt and pepper

juice of 2 limes

3 heaping teaspoons of honey or agave nectar

1 t. chili powder

1 c. corn frozen or canned

1 15oz can black beans, rinsed and drained

1/2c. vegetable stock

3T. cilantro, chopped

4-6 c. of baby spinach

Corn Tortillas

 

 

Saute in skillet over med. heat, olive oil, onion, garlic, cumin, dash

s/p till softened (about 3 min.). Add corn and veg stock;

stir for about 3 min. Then add, black beans. In separate bowl, mix

lime juice, honey, chili powder, dash s/p, and add to skillet. Toss

in cilantro and spinach. Stir until spinach is a bit wilted. Adjust

salt and pepper to taste.

Scoop into an over-the-stove-heated corn tortilla w/a dash of Tapatio

if like. Yum!

Hi Richard,

 

My family's favorite corn tortilla recipe is called Layered Enchiladas:

 

27 to 36 ounces spaghetti sauce

1/4 t cumin (or to taste)

12 corn tortillas, cut in half

1/2 to 1 lb cheddar cheese, grated

1/4 cup chopped onion, sauteed

30 oz refried beans

2 oz sliced olives

 

Pour sauce into a mixing bowl and mix in the cumin.  Heat 8 tortilla halves on

flat griddle and dip in sauce, then lay on bottom of 9x13 casserole dish.  Layer

with sauteed onions and then 1/3 of the cheese.  Second layer is another 8

dipped tortilla halves topped with refried beans and then 1/3 of the cheese. 

Last layer is the final 8 dipped tortilla halves, then olives, then the rest of

the cheese.  Usually there is a small amount of sauce left at the end and I pour

that on top (optional).  Bake at 350* for 30 minutes.
