Guest guest Posted November 19, 2008 Report Share Posted November 19, 2008 No dairy or eggs or gelatin Homemade Chocolate Pudding 1 cup cane sugar 2 oz. bakers chocolate (i use ghirardelli) 1 T cornstarch 1 T tapioca flour pinch of salt 2 cups soy milk 1 egg equiv egg replacer (or extra T of tapioca) 2 T of your favorite margarine 1 t of good vanilla Mix all the dry ingredients in sauce pan Add the cold soy milk and whisk until there no lumps. Cook over medium heat, stirring constantly until thick and glossy. Add the egg replacer and stir until well combined. If you use a real egg, beat egg in bowl, put a little of the hot mixture in with the egg, whisking quickly, then add egg mixture back into the sauce pan, stirring constantly for another minute or so. Remove from heat and add butter and vanilla, stirring until well blended Pour into your favorite dish and chill.
